Presenting our Rústica Sidra!
Our latest batch of traditional, European-style cider uses the same yeast strain as our Lost Carboy. Coupled with fresh juice from the 2023 harvest and inspired by Spanish and Basque cidermakers, we made our version of a sidra natural tradicional. Rather than our usual method of secondary fermentation and bottle conditioning to produce natural carbonation, our 2023 batch is unfiltered, still, and contains sediment.
Our Rústica Sidra likes to be poured using the Escanciar method in which the cider is poured into a glass from a great height. This allows for aeration of the cider, where residual carbonic gas is released to give it a slight and immediate fizz. This is a way to maintain the essence of the cider while providing a lively (but brief) fizz. Plus, it’s a new challenge in cider presentation!
The point is to mimic the action of tapping the cider barrel and having it spurt into a glass ( similar to the Txotx in Basque country).
To pour (in the Asturian way):
- Hold the bottle above your head and the glass below your waist at a slight angle.
- Tilt the bottle and pour it into the glass, but only a little bit: the cider is meant to be drunk in short quick bursts to maintain the fleeting fizz.
Easier said than done, right? After hours of extremely rewarding practice, we settled on a slightly lower height for the bottle; basically, whatever you are comfortable with. But do drink it an ounce or so at a time to relish the aromas and flavors as they are released by the splash against the glass.

2023 Batch: Unfiltered and Uninhibited!
The rumors are true: Our 2023 batch is UNFILTERED. This edition of Lost Carboy is opaque and colorful, with the same great taste that cider drinkers have come to expect from our fabulous cider. The carbonation is perlant, something that we have been hoping to achieve in our bottle conditioning.
This one is pretty special. We can’t wait for you to try it!

We produce our cider in small batches, allowing our flavors to develop naturally over time. It can take up to 9 months for a cider to get exactly where we want it. You won’t find us on the shelves of major chain stores or on tap at every joint in town. We are very selective with where our precious cider is; these are limited run ciders and we want them to get the respect they deserve.
When they are gone, they are gone, so make sure you get some when you can!
